Samphire
Salicornia europaea
Height and spread 15cm - 40cm
A salt loving plant that needs saline conditions to thrive and to make it taste salty - only use sea salt (not table salt.) We don't water it with salt water so you will need to do that, recommended at a solution of 1tsp of sea salt to 1 pint of water.
This plant has adapted in the wild to grow in tidal estuaries with scale like leaves on bright green stems.
Also known as sea asparagus it's best planted in a light sandy, soil in a sheltered sunny spot.
The stalks can be eaten raw for a salty addition to salads or steamed and boiled and eaten as a side.
